anyone want to share their favorite summer recipe(s) with me? I'm looking for some things for summer.
a meal, a dessert, drink, etc....

Do you have children? I have some great summer recipes for chidren and adults.
I will seek guidance from my favorite book and post a few for you this weekend (love that extra day making it a wonderfully long weekend).

While we're at the recipe thing. I could use some good picnic meals.
Every Monday at Chataque park, (it's a great hiking place, auditorium, restaurant, etc.) two rangers take the families on a short hike then we sit on this large grassy area and listen to them play children's music. The music is all about animals and animal safety. We have a lot of Bears and Mountain Lions and deer around here. Anyway while we are listening to the music everyone eats a picnic dinner and I'm tired of sandwiches! I need something more creative if I'm going to do this all summer long.

would maybe some grilled chicken work? you could cube it and add it to a salad. or just grilled chicken.

I just discovered something today... My son loves Newman's Own Low Fat Sesame Ginger Salad Dressing. I put it on Zucchini strings (just use a veggie peeler and make long "strings" then steam in the microwave for 2 minutes. Pour some dressing over it and you're good to go). Tonight we roasted red and orange bell peppers and put the dressing on them and he ate a bunch of the red peppers. He is my picky eater so I am so happy with my discovery.
Anyway, the foods I mentioned above could be served cool or cold and could be put in a thermos for a picnic.
